Don’t let your fresh strawberries go to the compost!
Freeze them if you have a big bundle and use them in this simple and delicious dish. You have to freeze two layers so plan ahead.
raw strawberry and cashew pie
first layer
- 3 bananas
- 2 cups frozen strawberries {or other berries}
- 1-3 tablespoons coconut oil
- Blend well
- Spread evenly onto cake plate {or springform pan}
- Freeze
top layer
- 2 cups cashews
- 2 cup dates
- 1 peeled orange
- drop of Young Living Citrus Fresh or Orange Essential Oil {optional}
- 2 tablespoons melted coconut oil
- Water, as needed
- Blend all ingredients until smooth. Only add water if necessary {start with only a little}.
- Layer the cashew cream on top of the berries.
- Freeze until solid.
Garnish with more sliced berries before serving. Store in the freezer and remove about an hour before serving to soften slightly.
