With Easter and Passover having just passed, chocolate is naturally on our mind, but summer is too. This week’s Recipe of the Week is a sweet treat that won’t have you feeling like you ruined your summer beach body. Our healthier version of fudge contains real ingredients, zero refined sugar, and that rich, chocolate flavor that will satisfy your sweet tooth without having you consume too much.

So, why is this fudge healthier than most?

Not only does the cacao powder and nibs provide that rich, chocolatey flavor, but they also nourish your body with amazing health benefits. Did you know that cacao contains more antioxidants than any other food? This means that cacao provides us with cancer protection and a lowered risk of developing degenerative diseases. Additionally, cacao has been proven to boost mood and prevent atherosclerosis. The coconut oil provides a source of healthy fat while almonds add a crunchy dose of fiber!

Just remember, like anything, be mindful of your serving size!  Enjoy!

  • 3/4 cup coconut oil, melted on low heat, plus more for brushing pan
  • 2/3 cup local honey {added to the coconut oil}
  • 1 cup cacao powder
  • ½ tsp. vanilla bean paste
  • 1/2 c toasted almonds, chopped (optional)
  • Cacao Nibs, for garnish (optional)
  1. Prepare small square pan by brushing it with melted coconut oil.
  2. Combine all ingredients, except nuts and cacao nibs, in medium-sized bowl and mix with electric hand mixer.
  3. Add roasted almonds and pour mixture into pan.
  4. Using an offset spatula (knife works too), smooth the top of the fudge so that it is even.
  5. Sprinkle with cacao nibs, if desired.
  6. Freeze until frozen, and enjoy!
