Summer is officially here, and with this beautiful season comes some hot, steamy days.

Instead of cooling off with typical (artificially sweetened) frozen fruit pops, try this nourishing recipe for fruit and yogurt smoothie cups. Filled with natural sweetness, wholesome crunch, and pure protein, these cups are the perfect way to cool off and satisfy your sweet tooth, without the guilt and added nutritional value.

Ingredients:

  • 2 ½ cups plain Greek yogurt
  • 3 teaspoons raw honey
  • 2 teaspoons vanilla extract*
  • 1 teaspoon cinnamon
  • ¾ cup strawberries, chopped*
  • ½ large banana, plus a few slices for top of cups, if desired*
  • 2 tablespoons unsweetened, flaked coconut*
  • ¼ cup low sugar granola* (Suggestion: Use Purely Elizabeth Granola)
  • ¼ cup unsweetened almond milk

*Feel free to substitute with any extract, fruit, nuts, or seeds of choice. Green smoothies are always a good idea!

Directions:

Line cupcake pan with paper liners. Set aside.

In large bowl, whisk yogurt, honey, extract, and cinnamon to completely combine. Fold in listed fruits (or fruit of choice) and coconut until completely combined. Pour mixture into blender and with blender running, add almond milk. Blend until mixture is completely smooth. Pour mixture back into bowl and fold in granola or any other wholesome add-ins of your choice. Distribute mixture evenly into cups and top with banana slice. Place in freezer for an hour, or until frozen.

Note: Using ice pop molds are a great way to get your kids to eat this healthier version of traditional fruit pops!
