If I might say so, this is one of the best homemade nut mole recipes! I can’t take the credit – it is a blend of many. I chose to reduce the sugar, up the spices and go all-in with a variety of nuts and seeds. Make it your own by experimenting with what you have on hand. You can’t go wrong with chocolate and nuts.
The chocolate addition really is decadent.

- 2 Tablespoon unsalted butter, melted
- 1 teaspoon maple syrup
- 1 Tablespoon cacao
- 1 teaspoon sea salt
- 3/4 teaspoon cayenne
- 3/4 teaspoon garlic powder
- 3 cups unsalted nuts, such as almonds, pecans, walnuts, cashews, hazelnuts, and/or peanuts
- 1/2 cup seeds of choice, such as pumpkin and/or sunflower
Preheat the oven to 350 degrees.
Cover a rimmed baking sheet with parchment paper.
In a small pan, melt butter and add maple syrup to combine.
Combine cacao, salt, cayenne & garlic powder in a small bowl, .
Combine nut and seed mix in a large bowl.
Drizzle melted butter over mix and toss quickly to evenly coat the nuts.
Sprinkle about ½ the cacao mixture onto the nuts and toss. Then add the second ½ and toss. Applying in two batches helps assure the most even coating of nuts.
Scatter coated nuts on the baking sheet.
Bake until lightly toasted and aromatic, 15-20 min, gently stirring once or twice to ensure even toasting.
Let cool on the baking sheet, then transfer to a serving bowl.
Store in a glass, airtight container for up to 1 week.
