Figs with Ricotta and Honey

This recipe with ricotta, figs, and honey was put together for our talk and tasting a local natural food store – Green’s Natural Foods. Both the flavor combination of fresh fits, fresh ricotta and honey plus the simplicity got rave reviews. Figs are a great fall treat. (Bonus if you have a neighbor with plenty!)

Ingredients for Ricotta Stuffed Figs

  • 8 fresh figs, cut in half
  • ½ cup fresh ricotta cheese
  • 2 Tablespoons local honey
  • ¼ cup pistachios, shelled and chopped (toasted optional)
  • 4 Tablespoons fresh mint, chopped
  • Sprinkle of sea salt

Putting it all together

  1. Slice figs down the center.
  2. Add a dollop of ricotta cheese to each fig.
  3. Drizzle with honey.
  4. Sprinkle with pistachios, mint and salt.
