This recipe with ricotta, figs, and honey was put together for our talk and tasting a local natural food store – Green’s Natural Foods. Both the flavor combination of fresh fits, fresh ricotta and honey plus the simplicity got rave reviews. Figs are a great fall treat. (Bonus if you have a neighbor with plenty!)
Ingredients for Ricotta Stuffed Figs
- 8 fresh figs, cut in half
- ½ cup fresh ricotta cheese
- 2 Tablespoons local honey
- ¼ cup pistachios, shelled and chopped (toasted optional)
- 4 Tablespoons fresh mint, chopped
- Sprinkle of sea salt
Putting it all together
- Slice figs down the center.
- Add a dollop of ricotta cheese to each fig.
- Drizzle with honey.
- Sprinkle with pistachios, mint and salt.
