cream and berries with a fig twist

This recipe is in our cookbook nourish on p264

During the REAL EATS challenge, we aren’t eating any dairy so I turn to cashews to make this creamy treat.

Cashew Nut Cream in BlenderThis recipe is in our cookbook nourish on p264 and its quick, simple and looks beautiful on the plate.

  • 1 cup raw cashews*
  • 1/4-1/2 cup water
  • 1 T maple syrup
  • pinch of salt
  • 1t vanilla

Blend above in a food processor to desired consistency.

Scoop into dishes and top with the below.

  • Berries of choice
  • Fig sauce**
  • Cacao Nibs

The added flavor of the fig sauce and the crunch of the cacao nibs really makes the berries pop.

*For a creamier texture, first soak the cashews for a couple of hours, drain and rinse.

**You ever wonder what to do with dried fruit that is a bit two wrinkly and hard to bite into?  (because, you know, it’s a sin to throw away REAL FOOD!).

Fig Paste and Sauce

I found some figs in this state that same morning of my cashew cream fixings.

I figured if I soaked them in some warm water for several hours, they would plump right up.

Bingo!  I then tossed them in the food processor (reserving the soaking liquid) and had fig paste with no added sweeteners, preservatives or flavorings.  Just pure figs.

The soaking liquid is what I used to flavor the cashew cream and berries.
