Summer Peach Salad with Basil & Balsamic is best super fresh during the high summer season.
Serves 2-4

Ingredients:

2 ripe peaches, sliced

4 cups arugula or mixed greens

½ cup fresh mozzarella balls (or crumbled feta or goat cheese)

¼ cup thinly sliced red onion
-
¼ cup toasted pecans or walnuts
-
Fresh basil leaves, torn
-
Balsamic glaze or reduction (store-bought or homemade)*

Olive oil or walnut oil
-
Sea salt & freshly ground black pepper
Optional Add-ins:

Sliced avocado
-
Cherry tomatoes, halved
Instructions:

In a large bowl or platter, layer the greens, peaches, cheese, onion, and nuts.

Drizzle with olive oil or walnut oil and a light swirl of balsamic glaze.
- Top with basil.

Sprinkle with salt and pepper to taste.

Serve immediately—ideally with a chilled drink and your feet up.
*Tip: If you want to make your own balsamic reduction, simmer ½ cup balsamic vinegar in a saucepan over low heat until thickened and syrupy (about 10 minutes). Let it cool before drizzling.
This Summer Peach Salad goes really well with grilled shrimp, tuna or chicken.
