There are 100 ways to make pesto. At the end of summer, you never want to see those herbs go to the compost bin so pesto to the rescue.  Here we have one of our favorites from our cookbook nourish – a community supported cookbook. 

Walnut Pesto

If you are looking for an alternative to traditional pesto, try this walnut pesto! 

Pesto is so versatile – you can use it as a spread for a sandwich, toss with pasta, dip for veggies, flavor for steamed veggies, a kick for soup or salad dressings.  

MAKES 1 CUP

part one: blend herbs

  • 1 c fresh parsley (lightly packed)
  • 1 c fresh basil (lightly packed)
  • ¾ c walnuts, toasted
  • 1 t fresh thyme leaves
  • 2 garlic cloves
  • ½ t salt, plus more to taste
  • ¼ t freshly ground black pepper, plus more to taste

Mix above in food processor until finely chopped. 

part two: add oil

  • ½ c organic olive oil

With the machine running, add the oil.
