Hydration is key all year long – but with the summer heat, we often need to stay on top it it more. Summer fruits are a great way to get more hydration in with watermelon topping the list followed by strawberries, cantaloupe, and peaches. Here is a crowd pleasing summer watermelon salad with several idea swaps to change it up.
- 1 small watermelon, chilled (2-3 cups)
- 1/2 cup feta cheese
- 1/3 cup white balsamic vinegar
- 3 Tablespoons extra virgin olive oil
- Cracked pepper, to taste
- 4 cups arugula
- 2 cups basil leaves, chopped
- 1/4 red onion, thinly sliced
- Cut watermelon in the shape you want.
- In a small dish, mash together feta, vinegar, olive oil and pepper.
- In a serving bowl, mix together arugula, basil and onion.
- Add the watermelon to the arugula and dress with the feta mix. Toss.
OTHER IDEAS:
- swap basil with mint and cilantro
- add toasted pumpkin seeds
- add diced cucumbers
- swap the vinegar with lime juice
- swap the arugula with spinach
