The Nourish Bowl is hearty comfort food. All the parts to this dish can be made ahead in bulk so it’s ready to be served with other great foods.
Here are some shortcuts that will help make this recipe quick and simple:
Make a big batch of brown rice so it is ready well in advance.
Have steamed greens on hand that you can use for several dishes.
Make the sauces ahead of time. They keep in the fridge and can be used in several other ways.
With these preparations done ahead of time, you can put this dish together in a matter of minutes.
SERVES 6
2 c cooked brown rice
2 c cooked black beans or 1-15 oz can or box, drained and rinsed
6 c sautéed or steamed greens (kale, broccoli, Swiss chard, collard greens)
1 package marinated tempeh or baked tofu (or animal protein of choice)
Light sauce (recipes follow)
Dark sauce
Peanut sauce
1 T toasted sesame seeds, for garnish (or gomashio)
3 scallions for garnish, thinly sliced
For each serving, layer ½ cup brown rice, ½ cup beans, 1 c greens, a serving of tempeh and cover with 2 T of each sauce per serving. Garnish with sesame seeds and scallions. Serve warm.
