This super tasty and crunchy Jicama Salad includes a ton of flavor with this simple dressing.

This simple recipe comes together quickly – especially if you use a food processor (links to our recommendations are below).

For an added pop of flavor:

Serves 4

Salad

1 large jicama (about 1 1/2 pounds), peeled and julienned (a food processor works great for this!)
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 green bell pepper, diced
1/2 cup chopped red onion
1/2 large cucumber, seeded, chopped
1 orange, peeled and cut into chunks
1/2 avocado, peeled and chopped

Dressing

1/2 cup fresh cilantro, chopped
1/3 cup lime juice
2 Tablespoons extra virgin olive oil
Pinch cayenne
Pinch paprika
Salt – to taste

Mix the salad together.  Make the dressing.  Toss everything together and let it sit for a half hour or so before serving as it helps the flavors mix well.  Keeps well for a couple of days (except for the avocado so you can always add that at the end).
