These sweet potato and black bean patties are hearty and incredibly simple to make.
Made with whole foods, versatile enough to include whatever food you have in the fridge, and packed with fiber, vitamin A, protein, and flavor.
- 15oz can black beans, well rinsed
- medium sweet potato, diced, steamed and mashed
- 1/3 cup porcini mushrooms, diced
- 1/3 cup whole wheat breadcrumbs, rice, or quinoa
- half clove garlic, minced
- a few dashes onion powder
- a few dashes cumin
- salt and pepper to taste
Combine all ingredients and mash until well combined. Form into patties and arrange on baking sheet. Cook in oven at 325 degrees until desired brownness (about 8 minutes a side). Serve as you would any burger or crumble over rice and vegetable sauté.
