5 ingredient tasty sipper!
Found this recipe this week in one of my favorite resources: World’s Healthiest Foods. It’s going to be nice and sunny here this weekend so I’ll be making sure one of my stock favorites is around: coconut milk.
Serves two
1 cup coconut milk, full fat canned
1/4 cup lime juice (1-2 limes*)
1/3 cup mint leaves plus mint leaves for garnish
2-3 T honey or maple syrup (this is my edit. I used half the called for amount)
2 cups cracked or crushed ice
Blend everything except the ice in a high speed blender. (I left it on for a minute and it got wonderfully blended and nicely frothy).
Add ice and blend till it’s iced.
Garnish with mint leaves.
If you plan ahead, chill your glasses.
*If you have Young Living’s Vitality Lime essential oil, use 1-2 drops – it really brightens the flavor nicely.
This is a perfect mocktail to brighten your day. And if you want to turn it into a cocktail, just add rum.
