zucchini noodles

A side dish perfect for summertime. It’s light, bright, and so simple to put together.



  • 2 green zucchinis, “spiralized”
  • ¼ cup Parmesan cheese, grated or shaved
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon parsley, roughly torn or chopped
  • Salt and pepper, to taste


Cut off ends of zucchinis. Place each zucchini through “spiralizer”, such as the Veggetti, to create thin zucchini noodles.

In a bowl, combine zucchini noodles, Parmesan cheese, and parsley. In a separate small bowl, combine lemon juice, olive oil, salt, and pepper to create dressing. Whisk to combine.

Pour dressing over the zucchini mixture, and toss to thoroughly coat the noodles.
