raw strawberry and cashew pie {for dessert or breakfast}

Don’t let your fresh strawberries go to the compost!  Freeze them if you have a big bundle and use them in this simple and delicious dish.  You have to freeze two layers so plan ahead.

first layer

  • 3 bananas
  • 2 cups frozen strawberries {or other berries}
  • 1-3 tablespoons coconut oil
  1. Blend well
  2. Spread evenly onto cake plate {or springform pan}
  3. Freeze

top layer

  • 2 cups cashews
  • 2 cup dates
  • 1 peeled orange
  • drop of Young Living Citrus Fresh or Orange Essential Oil {optional}
  • 2 tablespoons melted coconut oil
  • Water, as needed
  1. Blend all ingredients until smooth. Only add water if necessary {start with only a little}.
  2. Layer the cashew cream on top of the berries.
  3. Freeze until solid.

Garnish with more sliced berries before serving.  Store in the freezer and remove about an hour before serving to soften slightly.
